Avocado on Toast | RECIPE IN ENG

Hello Guys!

So is your avocado on toast game strong this january? January is know for being the month people starting healthy diets, going to the gym and improving their lifestyles. Just sayin'.

I actually started exactly what I described above, however much I may be totally not "in the mood" for it.

Like, when I sit on the couch, the few times that actually happens and stuff my face with sweets, I am TOTALLY in the mood. When I actually wake up in the morning and have a date with the treadmill... well, not so much in the mood.

ANYWAYS, just did an interview aka "grill session" as he calls it with Brokedinner so head on over to his blog to read it here.

Other "news" from me so far: - looking at spaces for a kitchen of mine. STAY TUNED (it's finally happening, I KNOW, OMG OMG, OMG!)

- Have lots of catering orders for the first two months of the year and the summer time.. so if you're a client reading this: send me your order ASAP to book your date and make sure I am available.

- Producing interesting new content both for my facebook, instgram and website (this one) to make everything a little more interactive. Want to know what you think, your difficulties and successes (and not only) and be able to help you to the best of my ability. So if you have any ideas of what I can produce for you that you would like to see, comment below.

This post is turning into something quite different than I imagined.. so to get back on track. AVOCADOS ON TOAST.

Yes. Basically my breakfast five times a week every morning due to nutritional benefits and also just because I LOVE AVOCADOS. Do people even exist that doesn't like them?

This picture was taken one morning where I was a little more "inspired" and needed to plate it up pretty for my mommy (just because she deserves it, you know?).

I made my go-to vinaigrette for this one.

Here's the recipe:

Made a vinaigrette out of: - 1 tsp honey (liquid)

- 1 tsp grain mustard

- 1/2 tsp freshly ground pepper

- 1/2 tsp salt flakes or regular salt

- 2 tbsp freshly squeezed lemon juice

- 4 tbsp extra virgin olive oil

Mix the first 5 ingredients together in a small bowl with a whisk and slowly add the olive oil to make an emulsion.

Cut off ends of a perfectly ripe avocado, cut in half and remove the seed. Peel. When peeled, cut crosswise 2-3 mm (or as thin as you can) slices.

Now, to spiral your avocado I have attached a photo below for you to see how you do it.

It takes like one or two times before you get it perfect, but I think it's well worth the effort and practise.

You can now apply this technique to other fruits and vegetables and make stunning spiral food art.

To finish this recipe, add micro greens, fresh or thawed peas, toast your favorite type of bread and serve.
