Pistachio & Raspberry Brownie | RECIPE

Did anyone say chocolate? My parents are coming to Lisbon for holidays for a week and my mom already put in her "order". She loves chocolate and can't get enough.. Like mother like daughter. Not only is this cake visually beautiful, it is delicious. However, it also makes sense for a cake this rich to add some freshness to it. Raspberries, why not? See the recipe below.

Pistachio & Raspberry Chocolate Cake (8 people) INGREDIENTS: 200g dark 70% chocolate, chopped 100g butter, in cubes

100g brown sugar

2 eggs, whisked

100g flour, sifted 1 tbsp Maizena (corn flour) 1 tsp baking powder

1 tsp vanilla extract

100g pistachios, toasted and chopped

50 walnuts

125g fresh raspberries 1 tsp fine salt

METHOD: 1. In a bain-marie (a water bath - a glass bowl over a pot of boiling water), melt sugar and butter. 2. Add chocolate and mix well and take off bain-marie.

3. Add eggs and vanilla extract. Mix well. 4. Sift together flour, cron flour baking powder and salt into the bowl and mix well with a hand mixer on high speed. 5. Add chopped pistachios and walnuts. Mix. 6. Transfer batter to a round baking tin lined with baking paper and bake in 180ºC (400ºF) oven for 25 minutes. 7. Add raspberries on top, as soon as chocolate cake is taken out of oven, pressing them down into the cake. Serve or save for up to 3 days. Note: You can freeze the cake if you want to. Cut into slices or freeze whole and wrap tightly in cling film. Store in freezer for up to 1 month.

Este bolo não é só visualmente bonito com o vermelho e o verde, é delicioso. Sempre faz sentido adicionar um pouco de frescura aos nosso pratos para cortar a riqueza do chocolate.. E framboesas - porque não? Vejam a receita em baixo.

BOLO DE CHOCOLATE DE PISTACHIOS & FRAMBOESAS (8 pessoas) INGREDIENTES: 200g chocolate preto 70%, picado 100g manteiga, cortado em cubos

100g açúcar mascavado

2 ovos, ligeiramente batidos

100g farinha com fermento 1 c. sopa Maizena (amido de milho)

1 c. chá fermento em pó

1 c. chá extrato de baunilha

100g pistachios, tostadas e picadas

50g nozes, tostadas e picadas

125g framboesas frescas, lavadas 1 c. chá sal fino

MÉTODO: 1. Num banho maria, (uma panela com agua a fervilhar com uma tigela de vidro por cima), derreter manteiga e açúcar. 2. Adicionar chocolate picado e misturar bem. Tirar tigela do banho maria.

3. Adicionar ovos e extrato de baunilha. 4. Peneirar farinha, Maizena, fermento em pó e sal para dentro da tigela e misturar com uma batedeira de mão a velocidade máxima. 5. Adicionar pistachios e nozes picados. Misturar. 6. Transferir para uma forma redonda untada com papel vegetal e cozer no forno a 180ºC durante 25 minutos. 7. Adicionar framboesas em cima do bolo e pressiona-las para dentro dele. Deixar arrefecer um pouco e serve. Consumir dentro de 3 dias. Nota: Este bolo pode ser congelado. Cortar em pedaços ou congelar inteiro firmemente embrulhado em película aderente. Consumir dentro de 1 mês. Só pode ser descongelado uma vez.
