Lemon Squid & Shrimp Skewers | RECIPE

I think we might take these sunny days as a sign of the arrival of summer!

Normally, summer means healthy and lighter food and so, to follow the footsteps of this, I am sharing a great little recipe with you that is both delicious, fast and light.

BBQ Lemon Squid & Shrimp Skewers (with lemon wedges)

Ingredients(for 4 people):

– 16 baby squids, cleaned up – 16 big shrimp with shell and heads on – Lemon wedges, to your liking – Extra virgin olive oil, to your liking – 1 garlic clove, finely chopped – 1 tsp paprika

– 1 crushed bayleaf – salt, to your liking – pepper, to your liking – freshly squeezed lemon juice, to your liking

Method: 1. Thaw the baby squid and shrimp (if you're not using fresh ones) and check if they're probably cleaned. Leave heads and shell on the shrimp as it almost "locks" in flavor. Soak wooden skewers in water for 30 minutes (helps not to burn them when you grill them). 2. Make the marinade in a big bowl: mix olive oil, garlic, bayleaf, paprika, salt, pepper and lemon juice. Let marinate for 10 minutes. Put on soaked wooden skewers. 3. Heat your barbecue up to high (if you don't have a barbecue, use a very hot grill pan) and grill the skewers on high heat for 4-5 minutes on each side. Serve hot with plenty of lemon wedges.

Verão significa comidas lights para muitas pessoas, e se não light, pelo menos leve e fresco. Partilho convosco uma receita rápida e deliciosa:

Lulas & Camarão no BBQ (com limão)!

Ingredientes(4 pessoas):

– 16 Lulas pequenas, já limpas (usei congeladas da marca Pescanova) – 16 Camarões grandes, com a casca e cabeça. – Gomas/Quartos de limão – Azeite, q.b. – 1 dente de alho esmagado sem casca – 1 c. chá paprika – sal, q.b – pimenta, q.b – sumo de 1/2 limão – 1 folha de louro

Método: 1. Descongelar (se estiver a usar congeladas como eu) e verificar que estão limpos debaixo agua fria a correr. Faz o mesmo com as camarões. 2. Por as lulas e camarões numa tigela e envolver num fio de azeite, paprika, louro, o alho esmagado e um pouco de sal (ao seu gosto). 3. Prepare o seu barbeque, e grelha as lulas 4-5 minutos de cada lado e os camarões 4-5 minutos de cada lado. 4. Servir quente com quartos de limão fresco. Rectificar sabores com sal e pimenta! <3
